The Cable Grist Mill, located in Cades Cove, was built by John Cable two years after the Civil War ended. John's father, a Pennsylvania Dutch farmer, had decades before designed an elaborate system to drain the swampy lands located in the western part of the cove. No doubt his father's ingenuity played a role in John's nature to do things differently than most folks. He " was the only person in Cades Cove to use an overshot water wheel, a gravity wheel which harnesses the force of gravity acting vertically on the water as it travels from the top to the bottom of the wheel."( smokiesadventures.com ) By using a long flume that brought the water to the waterwheel the rate of production was greatly increased instead of the tub mills used by the local farmers. The Cable Grist Mill continues to operate on the original premises and sells wheat four and corn meal at a reasonable price. Cades Cove is located in The Great Smoky Mountains National Park.
